For the last 7 years it really has been relatively easy to eat dinner as a family during the week. Now that Mia is involved with activities that occur on week nights, dinner as a family unit is much harder.
Meal planning on Sunday for the week is a big help. Also, I try to prepare meals that are easier to prep ahead of time on the nights that I have to become the carpool mom.
My go to main courses are ones that I can put in the crock pot or prepare to be able to pop in the oven. During the winter months my family loves Beer Can Chicken that I cook in the oven for about 3 hours. We also love a pot roast that cooks all day in the crock pot.
